A Comprehensive Curriculum

The Culinary Arts Program provides a comprehensive education in the field, guiding students from introductory courses to advanced culinary techniques. Key courses include:

  • Introduction to Culinary Arts: This foundational course starts a comprehensive program to train students for food service and hospitality careers. It focuses on essential industry skills, including basic food production, safety, sanitation, and practical communication and math skills applications within a restaurant setting. Students will also have opportunities to assist in catering events and daily operations at the Odin Inn Restaurant, reinforcing their learning through real-world experience.
  • Culinary Arts I: (College Credit) After passing the state food workers test, students will gain practical experience by operating the Odin Inn, a licensed restaurant and catering business owned by the North Kitsap School District. The course covers hands-on learning in quantity food preparation, using commercial equipment, setting up dining and buffet services, decorating bakery items, and maintaining personal and professional hygiene for public safety.
  • Culinary Arts II: In this advanced course, students deepen their culinary skills by planning menus, costing menu items, and preparing food for buffets, including operating the Odin Inn dining room and managing hors d'oeuvre parties. Participants also refine their food preparation and service techniques, bake various items, decorate cakes, and develop resume and job-seeking skills to enhance their career readiness.
  • Culinary Arts Manage First: This course utilizes the National Restaurant Association Education Foundation's "Manage First" curriculum, focusing on effective management practices in the food service, restaurant, and hospitality industries. Students will learn and apply relevant topics from this certification process directly to managing the Odin Inn restaurant and catering business, enhancing their career readiness.
